Using the fruits that we gathered from the farm, as well as generous surplus donations from High Riggs biodynamic garden and Beanies Wholefoods, our final activity of the summer programme got us really ready for celebration, by making bubbly drinks!

We learnt how to make wild sodas with naturally occurring carbonation, by feeding yeasts sweet fruit juices in a fermentation process. We were asked many times during the hand crushing of the berries why we didn’t just bring a blender with us, which is a good question, but we love the fact that handling bottles, funnels, sieves and mashing equipment becomes so much easier when working collaboratively. Children working with each other and microbes all around one very sticky table.
